Ingredients
Method
- Preheat oven to 250 degrees.
- Mix the sugar, flour, salt, baking powder, and cocoa in a mixing bowl.
- Separately lightly beat the eggs and add oil and butter. Mix into flour mixture just until blended.
- Mix in beets and vanilla.
- Divide into 24 greased muffin tins.
- Bake for approximately 20 minutes or until a toothpick inserted at the center comes out clean.
Notes
A dusting of powdered sugar on top or frosting would be a nice addition. This batter could also be used in other forms such as brownies.
