Method
- Place cider in a saucepan over medium-high heat and reduce to 1 cup. Set aside 2 tablespoons for the glaze.
- Combine flour, salt, baking powder, baking soda, and clove.
- Combine oil, eggs, vanilla, and remaining cider.
- Add dry ingredients to wet ingredients until just incorporated.
- Add shredded apple just to mix through.
- Portion into greased mini loaves, fill mini loafs ¾ full.
- Bake at 375 degrees oven for 15-24 minutes.
- When done, loaves should spring back when pushed gently and a toothpick should come out clean.
- Remove from pan to cool.
- Combine the 2 tablespoons of cider reduction and powdered sugar for the glaze.
- When loaves are cool enough to touch submerge tops in glaze, then let cool completely.
Notes
Play around with the spices.
1 cup of dried fruit can be added.
1 cup of nuts can be added.
