Sweet Potato Breakfast Cookies Recipe
- 2 cups rolled oats
- 1 cup flour
- 1.5 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup mashed sweet potato
- 1/3 cup honey or maple syrup
- 1/3 cup melted coconut oil (or other vegetable oil)
- 1 tsp vanilla
- 1/4 cup chopped walnuts
- 1/4 cup chocolate chips
Prepare sweet potatoes ahead of time: Bake at 350 for an hour, then mash and set aside for recipe.
Preheat oven to 350.
Combine oats, flour, cinnamon, baking powder, salt, and ginger.
Combine mashed sweet potato, honey, coconut oil, and vanilla.
Mix dry ingredients into wet until combined.
Spoon onto a cookie sheet and bake for 20-25 minutes until browned.
