Sweet Potato Breakfast Cookies Recipe

Servings 2 dozen

Ingredients
  

  • 2 cups rolled oats
  • 1 cup flour
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mashed sweet potato
  • 1/3 cup honey or maple syrup
  • 1/3 cup melted coconut oil (or other vegetable oil)
  • 1 tsp vanilla
  • 1/4 cup chopped walnuts
  • 1/4 cup chocolate chips

Instructions
 

  • Prepare sweet potatoes ahead of time: Bake at 350 for an hour, then mash and set aside for recipe.
  • Preheat oven to 350.
  • Combine oats, flour, cinnamon, baking powder, salt, and ginger.
  • Combine mashed sweet potato, honey, coconut oil, and vanilla.
  • Mix dry ingredients into wet until combined.
  • Spoon onto a cookie sheet and bake for 20-25 minutes until browned.
