Cornbread Muffins Recipe
- 1.5 cups flour
- 1/2 cup sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/2 cup melted butter or lard (Lard tastes great in corn muffins!)
- 1 cup plain yogurt
- 2 eggs, beaten
Preheat oven to 400 degrees. Grease well 18 muffin cups or use muffin liners.
Mix together all ingredients. This makes a thick batter.
Spoon into prepared muffin pan.
Bake for 10 minutes. Reduce heat to 250 degrees and bake for 7-10 minutes more or until the toothpick comes out relatively clean or bounced back when gently touched. Best if not overbaked and still a bit moist.
