Classic Lemon Bars

Ingredients
  

Crust:

  • 1 cup butter softened
  • 1 tsp salt
  • 1/2 cup sugar
  • 2 cups all-purpose flour

Filling:

  • 8 eggs
  • 3 cups sugar
  • 1/2 cup all-purpose flour
  • 2 tbsp all-purpose flour
  • 1 1/4 cups lemon juice about 6-10 lemons, depending on size
  • confectioners sugar for dusting

Instructions
 

  • Preheat oven to 250 degrees F

For Crust:

  • Blend together butter, salt, sugar, and flour.
  • Press into the bottom of an ungreased 9×13-inch pan.
  • Bake for approximately 25 minutes or until firm and golden.
  • Prep filling while baking.

For Filling:

  • Whisk together eggs, sugar, and flour for filling. Pour over hot baked crust.
  • Bake for an additional 25 minutes. The bars will firm up as they cool.
  • After pans have cooked, cut into square and dust with confectioners sugar.
