Sweet Potato Mini Loaf Recipe
- 1 cup roasted sweet potato roughly 1 large (see notes)
- 3/4 cup vegetable oil
- 1.75 cups brown sugar
- 3 eggs (room temperature)
- 1 tsp vanilla
- 1.75 cup flour
- 1.5 tsp baking soda
- 3/4 tsp salt
- 2 tsp cinnamon
- 1/2 cup nuts (any kind words well)
Preheat oven to 375 degrees.
Whisk together flour, baking soda, salt, and cinnamon. Set aside.
Place roasted sweet potato in the bowl of a stand mixer (a hand mixer works just as well), and mix for 30 seconds to break up sweet potato.
Add oil, brown sugar, eggs, and vanilla. Mix just to incorporate.
Add dry ingredients. Mix until just incorporated.
Portion into greased mini loaves, fill mini loafs ¾ full.
Bake at 375 degrees oven for 15-24 minutes.
When done, loaves should spring back when pushed gently and a toothpick should come out clean.
Remove from pan to cool.
Roast sweet potato at 375 degrees for about 25-45 minutes, until fork tender. Remove and discard skin.
Play around with the spices.
1 cup of dried fruit can be added.
1 cup of nuts can be added.
1 cup of chocolate can be added, the darker the better.
